Why do you have such odd hours?

Everything that we do takes time and is made from scratch. However, we finally found Spike!!!  All the refrigerators are working for the 1st time, and we just released our baked Malasada. All of the flavor with less of the guilt.

We appreciate everyone's patience and look forward to having a more predictable schedule in the coming months.

I'm allergic to milk, butter, eggs, honey, nuts, or gluten. Does anything contain these ingredients?

Yes, our scratch-made buns are made with high-protein Cairnsprings Mill flour, Maple Hill Grassfed whole milk,  Isigny Ste. Mere Doux butter, local raw honey, and Happy Valley eggs.

Yes, our slow-smoked 12-spice Szechuan pork is covered with a honey glaze.

Yes, the following scratch-made sauces

• South Carolina Pepper contains local raw honey.
• The Best of Both Worlds is a combination of Mom's Smokey Sweet Kansas City BBQ and South Carolina Pepper, which contains local honey

• Spicy Raw Egg Yoke & Garlic & Aioli contains raw egg yolk, which emulsifies the sauce.  
• Cognac Peppercorn Brown contains butter, Isigny Ste. Mere Doux butter, Organic heavy cream, and a Cairnsprings Mill flour roux to thicken the sauce.
• Pesto Chimichurri contains Pine Nuts.

Why has it taken you so long to open?

Shortly after purchasing the food cart in September of 2025, things went sideways.  It started with having to replace the leaky, mushroom-filled roof during an atmospheric river, and 6 months later, almost every inch of the trailer has been remodeled.

Just as we think we're over the hump, an unhoused person decided to trash the inside of our cart and discharge the fire-suppression system, covering everything in several inches of acidic green liquid.

But "Goonies never say die!" We're all cleaned up and ready to go!
